Goat-milk-cheese-tomato-pie

Today I made this lovely goat-cheese-tomato-pie and I just thought I would like to share the recipe. The pie was really good and I think I'll be doing it again in the future!
Basically I got the recipe from here, but since it's in Finnish I thought I would translate it.

For the pie crust:

500 g carrot mash
3/4 dl  running grease
3 ½ wheat flour
1 tsp baking powder
1/4 tsp salt

Filling:
1/2 dl lemon pesto
200g goat milk cheese
250g cherry tomatoes
1/2 dl sun dried tomatoes

Also needed:
Arugula
Oven pan where you can fry it (which should be around 32x24 cm)

The recipe is quite simple and only has 4 steps.  I'm really not a master in kitchen and still was able to make this, so don't worry that this would be hard to do.
Heat up the oven to 200 degrees!
  1. So first you start making the crust. Take the carrot mash and grease and mix them together. I used vegetable grease for this. After that mix  in different bowl the flour, baking powder and salt. When you have done this you can mix the flour bowl to the carrot mash bowl. Just add little bit of the flour and mix. Then add more and mix again. Keep doing this until all the flour is in the carrot mash bowl. Dough should look pretty smooth but still strong enough so it can be the crust. When you are done press the dough to bottom of pan. It would be good idea to try to make little edges so the filling won't come out. The thing that is different to the original recipe is that I found out that it is actually good idea to put the crust to oven for just couple minutes, so it won't end up being raw. So just put it there for 2-5 minutes and take it out. After you have done it add the pesto and spread it out evenly. 
  2. Now you get to do the filling. Just cut the goat milk cheese and tomatoes to thin pieces. When you are done put the cheese at the bottom of the crust. Just place it out there. After that you can add the tomatoes at top.
  3. Now you can fry it in the oven with the fillings. It takes 25-30 minutes in 200 degrees.
  4. Cut the sun dried tomatoes to small slices and sprinkle them on top of the pie. You can add some arugula or basil on top of the pie if you like.

So there you have it! Simple pie. I really enjoyed so I can recommend it all of you too. Try it out!
